Yard maintenance takes on a new flavor at the beach. We are lucky to have seven flourishing coconut trees in our backyard. Cocos are very popular here in Chelem. You will see stands along the road and, in high season, carts go up and down the beach roads selling coco frio and pay de coco–the best coconut pie you will ever eat.

Our friend Eduardo had Martin come over this morning to harvest our cocos. It was quite the operation. He tied off the large bunches of fruit, chopped them with a machete, then lowered them to the ground. Some random ones thunked to the ground. Now we understand how people can get injured if one happens to drop unexpectedly!

A new fave food: Panuchos

I had never had panuchos before visiting Chelem but they are now one of my favorite local snacks. Tortillas are fried so you can separate the layers a bit and stuff with refried beans, then deep fried so the tortilla puffs up a bit. Top with some pork or chicken and pickled onions, then season with some salsa to taste–a dash of habanero will do–and you are set. The Popular Pich restaurant in Chelem Centro serves them. I’m going to give this recipe a try and am keeping an eye out for panuchos here in DC so I can get my fix.
